Fresh fruit is everywhere right now, the farmers markets are loaded with berries, peaches, plums, mango and more. Now is the time to enjoy all these flavors. ( not to mention , buy excess and freeze for later this winter.) I wanted to share with y’all this simple yet underestimated Fresh Peach Crisp. Loaded with fresh sweet peaches then topped with a generous portion of crumb topping. Let’s be honest…we all want double the “crisp” 😉
PEACH CRISP
~FILLING:
4 Cups Fresh Peaches, peeled and sliced
1/4 Cup Lemon Juice
1/2 Cup All Purpose Flour
1/4 Cup Corn Starch
1 Cup Brown Sugar
1 Tablespoon Cinnamon
1/2 teaspoon Salt
~CRISP TOPPING:
1/2 Cup Butter, chilled and cut into pieces
1 Cup Brown Sugar
3/4 Cup Quick Cooking Oats
3/4 Cup All Purpose Flour
1/4 teaspoon cinnamon
Preheat oven to 350
In a 9×9 inch baking dish lightly spray with non stick cooking spray. Line the dish with 1 layer of peaches. With the remaining peaches toss in lemon juice first then add dry ingredients to coat, add those to the pan.* If there is any flour mixture left just sprinkle over the top of the peaches in dish.
Next in a large bowl combine crisp ingredients, making sure the butter pieces are broken up into smaller pieces.
Spread evenly over top the peaches. Bake for 35-40 minutes.
You may serve this warm with some sweet cream, ice cream or whipped topping. I have also served this chilled for breakfast.
No matter how you choose to serve it, I promise you that it wont disappoint.
