Hey, Hey….Look who is BACK! I have been MIA for awhile now and I want to say thank you so much for those of you have kept coming back. I feel I owe you a little explanation. Some of you might know that I recently okay well a year and a half ago moved back to the “city”. After living in a small town for 17 years. We made the decision to move to a small town life to raise our daughter. And I wouldn’t change a thing So after she graduated High School we decided to move back to “the big city”. I tell you this little back story because it all adds up to why the heck I have been MIA. When you live in a small town ….and I am talking so small there isn’t even a stop light. No Walmart, Smiths or even a movie theater, not even a hospital. I’m talking S-M-A-L-L!! So the places I worked and enjoyed were not at any place you have ever heard of. Therefore my Resume does NOT look impressive. And THAT is why I have been MIA. I have been on a search for my “forever job”. Side note here~ Can I just say that the whole online application process is VERY LACKING of any REAL information on the actual person applying for the position! UGH!! I would much rather go into a face to face interview every day of the week than fill out one more on line application where I am just another number. Anyhow…lol…. this is the reason I have been out of the picture. I fill out at least 5 online applications daily. I am embarrassed to say that I just didnt have it in me to type up a post. Just being honest. So really THANK YOU for sticking with me. And please keep this girl in your prayers to find that perfect receptionist position~ ASAP.
What do you say we get on to the recipe at hand~ Skillet Casserole.
This Casserole has everything you want in a complete meal~ Meat, Potatoes, Veggie and Cheese!
Skillet Casserole
1 lb. Hamburger
2 Cups Potatoes, cooked & shredded
1/2 Cup Carrots, diced
1/2 Cup White Onion
1 (10 3/4 oz) Cream of Mushroom Soup
3/4 Cup Water
1 Tablespoon Parsley
2 Cups Cheddar Cheese, shredded
In a 10″ inch Cast iron skillet brown the hamburger. *Use your favorite seasonings. My favorites are Onion Powder, Garlic Salt, Pepper, and Salt. Top seasoned meat with onions and carrots.
Sprinkle 1/2 Tablespoon of parsley. Then layer shredded potatoes. Mix together the mushroom soup with the water and pour over the potatoes. Adding a little salt and pepper if you desire.
Lastly top it all off with cheddar cheese. I then cover the skillet with foil. Keeping the heat on low, cook for 30-40 minutes.
And there you have it, Dinner on the table in 40 minutes, making the clean up simple by only using 1 pan!
