These Crepes have been my daughters favorite dish since she was little. In fact they have become a celebratory dish in our home…. we serve them for Christmas Day, First Day of School, Birthday Breakfasts any special occasion. We also enjoy them on ordinary weekends 😉
For those of you who have never made Crepes, do not be intimidated. They are super simple to make. I will show you just how simple they really are to make step by step.
Crepes
8 Egg’s
2 1/2 Cups Milk
1 teaspoon Vanilla
3 Tablespoons Sugar
1 teaspoon Salt
1 Cup Flour
*Optional Toppings: Syrup, Powdered Sugar, Jam, Fruit, Cream Cheese
Start by placing all the ingredients into a blender. Puree until smooth about 1 minute. Scrape down side of blender.
You will need a 8-10″ inch non-stick skillet. You will be cooking over a med.-high heat.
Pour 1/4 -1/2 cup of the batter into a heated skillet. Swirl pan until the batter has coated the bottom of the pan. (The batter will cook fast.) Release the sides of the crepe using a rubber spatula.
Fold crepe in half , and then in half again.
Repeat this process until all of the batter has been used. I like to serve them with a little butter that has been mixed with jam.
*You can also fill these crepes with something sweet like a hazelnut spread with fresh fruit or perhaps something savory like a cream cheese chicken filling. You can serve them for breakfast, brunch or dessert.
