Where are all my Pasta lovers? How about all the chicken lovers? You are going to LOVE these Chicken Alfredo Roll Up’s! I mean what’s not to love about a homemade creamy alfredo sauce, loaded with chicken and cheese? I do believe you have found your next favorite dinner recipe!
The sauce takes no time at all to prepare. And if you have any left over chicken or you can use rotisserie chicken to make this recipe in a flash! So time to kick up dinner a notch this week.
Chicken Alfredo Roll Up’s
4 Tablespoons Butter
3 Tablespoons Flour
1 Tablespoon Minced Garlic
2 Tablespoons Lemon Juice
2 1/2 Cups Milk
2 teaspoons Parsley
1/2 teaspoon Salt
1/2 Teaspoon Pepper
1 (8 oz.) Cream Cheese, softened
1/2 Parmesan Cheese
2 Cups Shredded Cooked Chicken
1 Pkg. Lasagna Noodles, Cooked and cooled.
In a large skillet melt butter, add in garlic and flour to make a light roux. Cook for 2 minutes stirring constantly. Add in lemon juice, and milk. Whisk together until all lumps are out. Add in cream cheese, parsley, parmesan, Salt and pepper. Continue to whisk until sauce thickens. Then add in chicken. Take off of heat and allow sauce to cool for 15 minute while you cook the noodles. Once the noodles are cooked, spread a spoonful of the sauce onto each noodle. *Because we love cheese, we added a small amount of mozzarella cheese to. You do whatever floats your boat.
Now this next step is a little messy, however it does work. Start rolling up the noodle on one end as tightly as you can. Then place into a greased baking dish seam side down.
Repeat until you have used all the noodles or sauce. Loosely cover pan with a greased piece if tin foil. Bake at 350 for 35 minutes.
Remove foil and bake again for another 8-10 minutes. That’s all there is to it. Super Easy and yet a very filling meal!
