Where was it written that Pie was the official dessert of Thanksgiving? Now don’t get me wrong… I LOVE pie. In fact it is one of my favorite desserts. It’s just that every year for Thanksgiving it seems like no one really gets a choice of what dessert they want. Well This year I am giving you that choice! 😉 I say this year you serve my Pumpkin Whoopie Pie’s!
These Pumpkin Whoopie Pies are light and fluffy, sandwiched together with a cream cheese filling to die for. Easy to make, and are freezer friendly. So go ahead and make them tonight for the big dinner & freeze a few for a late night binge.
Pumpkin Whoopie Pie’s
4 Cups All Purpose Flour
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
2 teaspoons Cinnamon
2 teaspoons Pumpkin Pie Spice
2 1/2 Cups Brown Sugar, packed
4 Egg’s, beaten
1 1/3 Cup Oil
2 teaspoons Vanilla
2 Cups Pumpkin Puree
**Cream Cheese Frosting**
Preheat oven to 350 degree’s
Sift together the flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice and brown sugar. Whisk together the eggs, oil, vanilla and pumpkin. Mix the two together. (The batter will be like a cake batter) Scoop batter onto a parchment lined baking sheet that has been lightly greased. Bake for 12 minutes.
Let cookies cool completely before sandwiching together with Cream Cheese Frosting. Then store in an air tight container.
