Everyone can have a “bad” day.
We all go about our day with thoughts of worries, stress, sadness, happiness, all running in and out of our own mind second after second. There is no way of knowing what trials another person is going through at that given moment you cross their path. That being said, I have had my share of “bad” days. And to be honest with Y’all…. they suck!
Think for a minute how many people, friends or strangers you cross paths with every day. Now how much better do you think YOU could make their day (better) by extending a smile or a genuine greeting? Or a gift from your kitchen?
I can PROMISE you, this MILE HIGH CHOCOLATE CREAM PIE will make anyone’s day better!
Mile High Chocolate Cream Pie
1 (9″ inch) Chocolate Cookie Crust
2 Cups Semi Sweet Chocolate Chips
2 Cups Heavy Whipping Cream, divided
1 Cup Powdered Sugar
2 teaspoons Vanilla
16 Oz. Whipped Topping, thawed
In a sauce pan combine 1 cup of the whipping cream along with the chocolate chips and vanilla. Heat over low heat until chocolate is melted. Whisk in the powdered sugar, set aside to come to room temperature. In a mixing bowl beat remaining whipping cream on high until stiff peaks form, about 8 minutes. Stir in the thawed chipped topping. One the chocolate mixture has cooled, fold into the cream topping mixture. Pour into the cookie crust. set in freezer for 2 hours. Slice with a hot knife and serve with a garnish of chocolate bar that has been broken.
