When Spring time hits, it’s as if something clicks in the craving part of my brain that makes me start craving the light sweet treats. This cake starts with the base of a cake mix, then add in a secret ingredient…..and DELICIOUS!
I am a huge fan of cake mixes. So if you are not a fan….well, we need to change your mind. 😉
These days you can find a cake mix in about ANY flavor you want. So if you are lucky enough to find a pineapple cake mix in your local shopping place, more power to you to substitute it for the yellow cake mix in this recipe. (my small town sadly does not carry all the flavors available) Now for the “secret” ingredient…this actually came about by me not having my usual sour cream on hand. Little side note here~ I ALWAYS add a 1/2 Cup of sour cream when using a cake mix. It makes the cake so moist! That being said, as I was busy creating this master piece, I went to grab the sour cream only to find that I had used it all on the taco’s the night before. After looking around to see what I did have on hand, that’s when I decided to add in ….. MAYONNAISE! Yup, you read that right….Mayo! And guess what it worked splendidly! But don’t take my word for it, you must make this for yourself to taste the amazing-ness of it. I am positive you are gonna love this cake as much if not more than my family & friends do.
Pineapple Dream Cake
1 (15 oz.) Crushed Pineapple~ reserve juice
1 (18.25 oz.) Yellow or Pineapple Cake Mix
2 Eggs
1 (11 oz.) Mandarin Oranges, drained
1/2 Cup Mayonaise
FROSTING~
1 (12 oz.) Cool Whip~ thawed
1 (5.1 oz.) Instant Vanilla or Cheesecake flavor Pudding
Drained Pineapple
Preheat Oven to 350 degree’s
In a large mixing bowl combine the cake mix, reserved pineapple juice, eggs and mandarin oranges, * I like to cut the mandarin oranges into smaller pieces. along with the mayonnaise. Whisk until smooth. Pour into a greased 9″ x 13″ pan. Bake for 30 minutes.
While the cake is cooling, mix together the thawed cool whip, pudding and drained pineapple. Let chill for 30 minutes. Evenly spread frosting over a completely cooled cake. ~ Store cake in fridge.
This cake is so moist, and the flavor is perfect for a Spring time dessert. Imagine serving this to your family & friends for a Spring Picnic. Or even as a treat for your child’s Spring school party, no matter what the occasion is I am sure it will be a favorite.
