I haven’t decided yet if this is more like a dessert cake or a fabulous way to start off the day and have it for breakfast. This has now become my favorite coffee cake recipe to date. Give it a try, substitute in your favorite berry and see what you think.
Berry Crumb Coffee Cake
1 1/4 Cups Cake Flour*
1/2 Cup Sugar
1/4 teaspoon Baking Soda
1/4 teaspoon Salt
1/2 teaspoon Cinnamon
6 Tablespoon Butter, cubed
2 Eggs, separated
2 teaspoons Vanilla Extract
1 teaspoon Almond Extract
1/3 Cup Buttermilk
2 Cups fresh or frozen Berries
~Crumb Topping
1/3 Cup Sugar
1/3 Cup Brown Sugar
1/2 teaspoon Cinnamon
8 Tablespoons Butter, cubed
1 3/4 Cups Cake Flour*
*Make your own Cake Flour :
For every 1 Cup of All Purpose Flour you need, remove 2 Tablespoons and replace with 2 Tablespoons of Cornstarch.
Preheat oven to 325 degree’s
Sift together the first five ingredients. Add butter, cut into flour mixture until small course crumbs. Add in 1 whole egg plus 1 yolk, extracts and buttermilk. Press batter into a lightly greased parchment lined 9″ x 9″ pan. Add berries, then crumb topping. Bake for 38-45 minutes, making sure center is cooked through. Let cake cool completely before cutting.
