Sweet rolls have got to be my biggest down fall…. I can never pass one up. Needless to say, these Lemon Sweet rolls are my latest favorite version. They are soft, sweet and a little tart. Topped off with a Lemon Cream Cheese frosting, that melts in your mouth. I dare you to try and stop at just eating one. (I couldn’t do it!)
For these sweet rolls, I start with my favorite Sweet Dough recipe, You can find it HERE. The “key” to this dough is to not add to much flour. It is a “stickier” dough than say your bread dough. You want the dough to feel wet, yet it will easily come off your hands. One the dough has risen and punched down, you are ready to make the lemon filling.
Lemon Filling
2 ( 8oz.) Cream Cheese, softened
3 Cups Sugar
1/4 Cup Fresh Lemon Juice
Zest of 1 Lemon
Beat all the ingredients together until smooth. Spread over rolled out dough. Roll up dough, cutting into 1-2 inch rolls. Place onto a lightly greased sheet pan. Preheat oven to 350 degrees. Let rolls rise for 30 minutes in a warm place. Bake for 25-30 minutes or until golden brown. I love to frost the rolls while they are still warm. For these rolls I beat together 1 (8 oz.) Cream Cheese that has been softened. 3 Cups Powdered Sugar, 1/4 Cup Lemon Juice. *If the consistency is to thick or thin for you, just add in more juice or more powdered sugar.
These Lemon Sweet Rolls melt in your mouth. Enjoy 1 or 2, then hide them away ! 😉
