Mark your calendars….this is a monumental moment! I am sharing a Seafood recipe…. OMG! For those of you who may not know this about me, I do NOT eat any type of Seafood. I just have never cared for it. This is not to say that my family feels the same way. In fact they like seafood, and shrimp is one of their favorites. They say you will do anything for the ones you love. Well this is proof that is true. 😉
Coconut Shrimp
1 lb. Shrimp, peeled & deveined
2 Eggs, beaten
1/2 Cup All Purpose Flour
3 Tablespoons Cornstarch
1/2 teaspoon Salt
1/2 teaspoon Pepper
1 Cup Unsweetened Coconut, shredded
1 Cup Panko Breadcrumbs
~Oil for frying
In a small bowl place the beaten eggs, in a second bowl stir together the flour, cornstarch, salt and pepper. And in a third bowl combine the coconut and breadcrumbs. Now you are ready to dip and coat each shrimp. Start by rolling the shrimp in the flour mixture, then dip into egg, then roll in coconut. Repeat with all the shrimp. While you are coating the shrimp, heat oil in a frying pan. place shrimp in oil and let cook until golden. about 1 to 1 1/2 minutes on each side. You do not want to over cook. Let fried shrimp drain on a paper towel before serving. These taste great with a mango salsa that has been pureed, or with a mayo sour cream dip.
