Big surprises come in little packages. This saying rings very true with these Mini Butter Button Whoopie Pies! I wanted to give some cute little gifts to some friends that were packaged in jars. (I am a HUGE canning jar lover!) And look how cute they turned out…
They are quick and easy to make, plus they taste amazing. Perfect for gift giving.
Mini Butter Button Whoopie Pies
1 Cup Butter, softened
3/4 Cup Sugar
3 Egg Yolk’s
1 teaspoon Almond Extract
2 1/4 Cups All Purpose Flour
~Filling
8 oz. Cream Cheese, softened
1 teaspoon Vanilla
4 Cups Powdered Sugar
I like to start by making my filling first, that way it can chill for a few minutes while I am baking the cookies. In a bowl beat the cream cheese, add in vanilla and powdered sugar and mix again until smooth. Chill. Preheat oven to 350
For the cookies, place the butter and sugar into the bowl and beat on high until light and fluffy. Add in egg yolks one at a time while the mixing is going. Once the yolks are incorporated, add the flour. Mixing until smooth. Scoop batter into a large pipping bag, with a large tip. Pipe cookies onto a parchment paper lined baking sheet, that has been lightly greased.
Bake for 8 minutes. Let cookies cool on pan. Take the filling out from chilling and place into a piping bag. Pipe a small amount of filling onto the bottom side of one cookie, then top with another. Place into a covered jar or container.
