There is nothing like a homemade breakfast on the weekends, to start it off right. When I was a child I remember I looked forward to the Saturday mornings for 2 reasons…. Cartoons and my Dad making waffles! Now a day’s I try to take the time to prepare a home cooked “big” breakfast as often as I can on the weekends. It really seems to bring my family together. This past weekend I wanted to spice our breakfast up a little with these spicy hash browns. It was a hit.
Spicy Hashbrowns
4 Large Baker Potatoes, cooked & shredded
1/4 Cup Butter, melted
1/4 Cup Onion, shredded
3 Tablespoons Green Onion, sliced
1/2 Cup Salsa
2 Tablespoons Jalapeno, diced
Mix all ingredients together in a bowl. Place potatoes onto a hot griddle. Let cook for 3 minutes, then turn potatoes over and cook for another 3 minutes or until crisp. Serve hot along side fried eggs.
