Summer time is in full swing. Many of you are going on road trips, going to amusement parks, visiting family, starting new adventures,or just taking a break from your year around job. There are so many more new opportunities for many of us to take advantage of during the Summer months. I hope that each of you are finding time to have an adventure!
My adventure this Summer is finding the time to do the little things that I haven’t been able to find time for during the busy school year. Like getting in the kitchen and creating new recipes for Y’all. I love to research what the latest foodie’s are wanting to make and then creating a recipe to match. Well this Summer it’s all about recipes that are EASY to make as well as COOL & REFRESHING. Of course the first thing that pop’s into my mind was a dessert! 😉 Today I am sharing a twist on the traditional layered delight recipe. My Vanilla Cream Peanut Butter Delight is a combination of an icebox dessert and a layered delight. Y’all are going to love it!
Vanilla Cream Peanut Butter Delight
16 oz. Vanilla Cream filled Sandwich Cookies, crushed
4 Tablespoon’s Butter, melted
8 oz. Cream Cheese, softened
3/4 Cup Powdered Sugar
1/2 Cup Creamy Peanut Butter
8 oz. Whipped Topping, thawed
1 (3.9 oz) Instant Cheesecake flavored Pudding
1 1/2 Cup Milk
1/2 Cup Peanut Butter Chips
Preheat oven to 350
Place cookies into a blender or food processor for a minute until you have fine crumbs. Mix with the melted butter, press cookie mixture into the bottom of a 9 x 9 inch pan. Bake for 10 minutes. Allow crust to cool completely. Next whisk together the milk and instant pudding, set aside and let chill for 10 minutes. When crust is cooled, spread pudding mixture evenly over the crust. In a mixing bowl cream together the cream cheese, powdered sugar until smooth. Then add in the peanut butter and mix well. Spread the peanut butter filling over top of the pudding layer, followed by the whipped topping. Sprinkle with cookies crumbs and peanut butter chips. Cover and chill for at least 1 hour before serving.
