I believe that some of the best recipes come out of “mistakes” in the kitchen. I am not sure about Y’all, but I sometimes get stuck making the same version of a recipe due to the fact that I like them. This casserole being one of my favorites, I was looking for a way to spice it up a bit. I happened to have just made a batch of my Easy Tomatillo Salsa ..well needless to say, I will be making this version of the casserole from now on. It is delicious!
Tomatillo Salsa Omlet Casserole
4 Eggs
1 (15 oz.) Evaporated Milk
3 Tablespoons All Purpose Flour
2 Cups Tomatillo Salsa
1/4 teaspoon Salt
1/4 teaspoon Pepper
2 Cups Sharp Cheddar Cheese, shredded
2 Cups Monterrey Jack Cheese, shredded
1 Cup Ham, cooked & diced
1/2 Cup White Onion, diced
Preheat oven to 325
In a bowl whisk together eggs, milk, flour, salt, pepper and set aside. In the bottom of a 9″ x 9″ pan spread 1 Cup of the tomatilla salsa. Sprinkle 1 cup of each cheese, half of the ham and onion. Repeat a second layer with the remaining salsa, cheese, ham and onion. Pour egg mixture over the top. *At this point you can continue to bake immediately or cover and chill over night to bake in the morning. If you are waiting to bake it the next day, make sure to remove the casserole from the refrigerator 30 minutes before you bake. For immediate baking place into your preheated oven for 1 hour. Making sure the center is cooked. Serve warm.
