These hot Summer Days (and here in Nevada I mean 112 degree kind of HOT) makes one not want to cook. Believe me, when it is hitting a record breaking amount of days that have been in the 100+ degree’s the last thing you are thinking about is turning on a oven! This is when I have a close relationship with my BBQ Grill. If it will fit on a rack in the oven it will fit on a grill! You can grill anything from breakfast sandwiches, to dessert. Today I am sharing a quick and easy summer time treat you can whip up in a matter of seconds.
All you need in a fresh Pineapple cut into large chunks. Place onto a skewer. Place directly onto a hot grill.
(I like to lightly spray my grill rack with cooking spray before turning on the heat, to help prevent the pineapple from sticking to the rack)
Let grill for 30 seconds on each side. Remove from heat, VERY LIGHTLY sprinkle a dash of Cayenne Pepper onto each piece of pineapple. That is it! you will be pleasantly surprised a how delicious this treat it! I like to eat it just like that….however if you may want to serve it along side a bowl of ice cream. 😉
