Every time I want a homemade cookie, these are the ones I crave! They are loaded with tart dried cranberries, white chocolate chips and a hint of orange zest. Add in the cream cheese filling…Oh My Flipping Heck!
Cranberry White Chocolate Sandwich Cookies
2 Cups Sugar
1 1/2 Cup Butter, softened
2 Egg’s
4 Cups All Purpose Flour
3 teaspoon’s Baking Powder
1/2 teaspoon Baking Soda
1 Cup Dried Cranberries, chopped
1/2 Cup White Chocolate Chips
2 Tablespoon Fresh Orange Zest
1 teaspoon Almond Extract

**Cream Cheese Filling recipe**
Preheat oven to 350
Cream together is a large mixing bowl the sugar and butter until fluffy & light, then add in the eggs and mix well. Sift together the flour, baking powder and baking soda. Add to the cream mixture 1 cup at a time, while mixing. Add in the cranberries, chocolate, zest and extract, mix until well blended. Cover and let dough chill for 30 minutes. Roll dough into 2 inch balls, press tops of cookies into some decorating sugar if desired. Place on to a parchment lined baking sheet that has been lightly greased. Bake for 8-10 minutes. Let cookies cool completely before filling this the cream cheese filling.
