Boy do I have a delicious recipe for Y’all today! I am so lucky to have the friends I do in my life. After coming home from a wonderful visit to the Great State of Georgia, with my good friend Jyl….I was invited to come pick apricots to my hearts content at a friends ranch. Friends are a Blessing in your life….NEVER take them for grated! With that being said, I knew I wasn’t going to be able to do much canning of apricots on my first few days back due to a busy work schedule. But I was NOT turning down fresh apricots for anything 😉 ~ So I put my thinking cap on and came up with a recipe for a small batch of Apricot Freezer Jam! Y’all are going to want to go out and get yourself some fresh apricots ….this Jam is addicting!
Easy Apricot Freezer Jam
3 Cups Fresh Apricot’s, chopped
2 Tablespoons Lemon Juice
5 Cups Sugar
3/4 Cup Water
1 (1.75 0z) SureJell Pectin
In a large bowl mix together the chopped apricots along with the lemon juice and sugar. Set aside for 15 minutes. *Now if you like your jam to be smooth without fruit pieces, place mixture into a blender. Puree until smooth. Then place fruit into a large sauce pan. In a small sauce pan add the pectin and water. Stir until dissolved and bring to a boil for 2 minutes. Then pour into the fruit, and bring to a boil for 3 minutes stirring continuously. Divide jam into sterilized jars. This recipe makes 5 pints or 8 half pints. Place lids on jars and let sit at room temperature for 24 hours. Then place in freezer. This jam can keep in the freezer for up to 1 year. Enjoy! ~ Lark
