It’s the little things in life that put a smile on my face. Potatoes put a BIG smile on my face! I love them prepared just about any way I can get them. That being said, these Bacon Grease Fried Potatoes are absolutely my favorite! I mean really…People they are fried in BACON GREASE! Hello! If you are a carb junkie like I am, eat and be merry for tomorrow you will have to bike, run and peddle them off your thighs. (Oh but they are so worth it!)
These are easy to make with little time. If you are wanting to serve these for a larger crowd, simply double or triple the recipe. I love to serve them warm. However if you are lucky enough to have some left over, you can easily transform them into a fabulous potato salad by adding in some hard boiled eggs and a touch of mayonnaise.
Bacon Grease Fried Potatoes
3-4 Russet Potatoes, peeled & thinly sliced
1 Med. White or Vidallia Onion, sliced thinly
6-8 Sliced of Bacon, diced
4 Tablespoons Olive Oil
Salt
Pepper
Chives
Parmesan Cheese
In a large dutch oven or cast iron skillet, cook bacon until crisp. Do NOT drain grease.Then add in the sliced potatoes, onion and olive oil. Cooking on Med.-low heat, stirring often. Cook until potatoes are tender. Salt and pepper as desired. Serve warm with fresh chives and a sprinkle of parmesan cheese.
