Strawberry Season is upon us, what will you be making with these heaven sent little gems? There are so many ways to enjoy them. I find that I have to make sure to put some aside so that I may enjoy them as nature intended. However you like to eat them, you really must make this cake! This cake is super moist, light and refreshing. You will be amazed at the sweet strawberry flavor, not to mention the sweet creamy strawberry cream cheese frosting that is between each layer. Add in the fresh pureed strawberry syrup…..DIVINE!
Strawberry Layer Cake with Strawberry Cream Cheese Frosting
1 (15 oz.) Strawberry Cake Mix
1/4 Cup Oil
1/2 Cup Fresh Strawberry Puree ( 1 cup whole berries)
1 Cup Water
3 Egg’s
Strawberry Cream Cheese Frosting
2 (8oz.) Cream Cheese, softened
1 Stick Butter, softened
6-8 Cups Powdered Sugar
2/3 Cup Fresh Strawberry Puree (1 1/2 Cup whole berries)
Start by removing the greens from the strawberries. You will need approximately 8 cups of strawberries. This will give you enough for the puree as well as enough to make the strawberry syrup. Puree berries for the cake batter, set aside. Do the same for the puree for the frosting. Preheat your oven to 350 degree’s.
In a mixing bowl combine the cake mix, oil, water and eggs. Beat until smooth, then add in the strawberry puree. Line (2) 8 inch round cake pans with parchment paper and lightly grease sides of pans. Divide batter evenly between the two pans. Bake for 20-24 minutes. Let the cake cool in pans for 10 minutes. Then remove from pan and place in freezer for 2 hours. I like to do this with every cake I plan on frosting. It helps the frosting go on smooth with out tearing the cake. If you are planning on serving the cake right away, you can frost as soon as the cake is cooled. While cake is in the freezer, start making your frosting, by beating together the cream cheese and butter until smooth. Add in powdered sugar 2 cups at a time until you reach the desired consistency. Add in the strawberry puree, beat to incorporate. If the frosting is thin, add in more powdered sugar. Cover and chill until you are ready to frost your cake layers. *This is also a great time to make the Strawberry Syrup, if you decide to drizzle in on the top layer.
When cake layers are chilled or cooled enough to frost, spread a small amount of frosting on the bottom of a cake plate. *This helps keep bottom cake layer in the center of the plate. Place one layer of cake over top and gently press down to help “stick” to the frosting. Divide the strawberry cream cheese frosting on half so that you will have the same amount on each layer. Frost the first layer. Then repeat with the second layer. I like to then drizzle the Strawberry Syrup over the top. Garnish with fresh strawberries if you desire. Chill cake for at least 30 minutes before slicing & serving.
