Paddington the Bear is a lovable little Bear who first came to life through the magic of story telling, as well as through imagination of children around the world. Everyone My age is sure to know just what I am talking about. So I was thrilled to learn that they were bringing Paddington to life on the BIG SCREEN for this generation of children.

Paddington has inspired me to create a recipe in his honor. I am sure that these Orange Marmalade Thumbprint Cookies would have been his favorite. Give them a try and I am sure you will fall in love with them as well.
The Marmalade is easy to make and you will be amazed at the intense flavor. However if you are short on time, you can fill each thumbprint cookie with Orange Marmalade you buy at the store.
Homemade Orange Marmalade
3 lbs. Fresh Oranges, thinly sliced with seeds removed
2 quarts of Water
8 Cups Sugar
In a large bowl place the cut oranges and water to soak over night. Making sure you cover the bowl tightly. The next day transfer the ingredients into a large stock pot or dutch oven. Bring to a full boil, then reduce to a simmer and cook uncovered for 15-20 minutes or until the oranges are very tender. Add in the sugar, return to a high heat to bring it back to a full boil. Stirring constantly for 35-45 minutes or until the mixture starts to thicken. Remove from heat and let stand for 2 hours. Skim off foam and ladle into hot sterilized canning jars. Follow your directions for processing Jam or Jellies in a hot water bath.
Put this delicious orange marmalade into the center of the cookies and drizzle a little white chocolate over the top….and then try your best not to dive head first into the batch of cookies. I am thinking that Paddington Bear wouldn’t be able to stop himself either.
