Chocolate Strawberry Filled Red Velvet Cupcakes

Filling~
3 Cups Heavy Whipping Cream, chilled
1 Tablespoon Vanilla
1 (3.9 oz.) Instant Chocolate Pudding
1 Cup Powdered Sugar
2 Cups Fresh Strawberries, diced
Make the Red Velvet Cake batter, and divide evenly into 12-18 cupcake liners. Bake @ 350 for 19-25 minutes. Let them cool completely on a wire rack, while you make you make the filling.
In a large mixing bowl beat together the Whipping Cream, vanilla and pudding mix until thick. Then cover and let chill while the cupcakes are cooling. Then cupcakes are cooled, cut a small hole into the tops of each. Press down with your finger the middle of the cake to make a little bit more room for the filling. Take filling out of the fridge,, fold in the diced strawberry pieces. Add a heaping spoonful of the filling to each cupcake. Replace the tops back on and frost. with you favorite Cream Cheese Frosting. I then place them into the freezer to help set up for 30 minutes. If you have left over strawberries, I like to dip them in chocolate and use them as a garnish on each cupcake.
