As many of you know My family is small, only my husband , Daughter & myself. For this reason I try to make smaller “portion sized” dessert servings, for those nights we want to have a treat. One of my husbands favorite flavor, is anything Peanut Butter. For this recipe I was actually making a full sized pie for a friend, and had wanted to make another for my own family. Knowing it would take us days to eat a whole pie, I turned the pie into individual parfaits. They were the perfect size!
Peanut Butter Pie Parfaits
1 (8oz.) Cream Cheese, softened
1 Cup Creamy Peanut Butter
1 Cup Powdered Sugar
1 (12 oz.) Whipped Topping, thawed
2 Cups Crushed Cream Filled Cookies
1/2 Cup Salted Peanuts
Start by beating together the cream cheese and peanut butter until smooth. Then add in the powdered sugar and mix well. Fold in the whipped topping. In small jars or glasses place 2 Tablespoons of the the crushed cookies into the bottom of each glass. Pipe in a layer of the filling, then sprinkle on several peanuts. Repeat with a second layer or until all the ingredients are used. Let chill for 15-30 minutes before serving.
