The Holidays are upon us. Where has the time gone? I feel as if Summer was just yesterday. Thanksgiving is one of my favorite time of the year. I know hard to believe that a “foodie” loves thanksgiving right? (lol) Being in the kitchen preparing a big dinner relaxes me. Typically I will start making the dessert’s for the big meal the day before. I have found that this cake gets better every day! For those of you who aren’t big sweet potato fans, this cake has a very subtle taste…..not overwhelming at all.
Sweet Potato Cake with Praline Frosting
~Cake
1 Cup Vegetable Oil
2 Cups Sugar
4 Eggs
1 1/2 Cup Cooked Sweet Potato’s
1/4 Cup Hot Water
1 teaspoon Vanilla
2 1/2 Cups Self Rising Flour
1 teaspoon Cinnamon
1/2 Cup Chopped Pecans
~Frosting
1/2 Cup Butter
1 Cup Brown Sugar
1 Cup Evaporated Milk
3 Egg Yolks
1 1/2 Cup Shredded Coconut
1 Cup Pecans, chopped
1 teaspoon Vanilla
Preheat oven to 350
In a mixing bowl, beat oil and sugar. Add eggs in one at a time, beating well. Next add the sweet potato, water and vanilla. Sift together the flour and cinnamon, add to the batter. Mix well. Stirring in nuts. Pour batter into a greased 9×13 pan. Bake for 40-45 minutes.
Now you start making the frosting by melting the butter in a sauce pan. Whisk in sugar, milk and egg yolks until smooth. Bring to a boil over medium heat. Boil for 2 minutes,then remove from heat. Stir in coconut , pecans and vanilla. Spread over a warm cake.
