Growing up in a family of 7 children, I am sure my Mom felt like at least one of her kids were ALWAYS hungry. I know I feel like my 1 child is always telling me she is hungry. So I can only imagine that having to prepare a big Thanksgiving Dinner, PLUS having to think of breakfast, lunch or snacks is what started our tradition of the “relish tray”. Also known as a veggie/cheese/crackers/dip tray. I remember having a card table set up in the living room, (to keep the kids out of the kitchen~ my Mom was a genius!) loaded with veggies and ranch dip. Along side was chips, crackers, cheese, beef sausage and anything else we could find. This snacking sideboard was put out during the watching of the Macy’s Thanksgiving Day Parade in the morning and was restocked through out the day until about an hour before the Dinner was ready. I continue this tradition with my own family. Each year I try and think up a new item to add to the snack table. This year I am adding this Chipped Beef Dip!
It can be served with crackers, pita chips or toasted bread. It is a warm dip, however it is just as delicious cooled. My family devoured it!
Chipped Beef Dip
2 (8oz.) Cream Cheese, softened
1 Cup Sour Cream
1 (2.25 oz) Chipped Beef, diced
1 teaspoon Dried Minced Onion
1/2 teaspoon Garlic Salt
1 Tablespoon Dried Chives
1/2 teaspoon Black Pepper
*1/4 Cup Fried Onions~ Optional
Preheat Oven to 350
Mix together the cream cheese and sour cream until smooth. Add in remaining ingredients, except the fried onion if you are choosing to add them. Spread the mixture into a baking dish, bake for 20 minutes. *If you are adding the fried onions, you will then add them to the top of the dip and return to the oven for an additional 5 minutes. Serve warm, or cooled….. it will make no difference because everyone will love this dip either way! Happy Thanksgiving, Lark
