I never thought that I would be as busy as I am at this age of my life….not to say that I am “old”, it is just I had the vision in my head that at this age I would be having lunch dates with my girl friends. Perhaps go window shopping at a moment’s notice, or even have the time to read a book when I choose. Well I can do these things now, it just takes a lot of preparation and scheduling to actually get to do it. I know that it wont always be this way. In fact I have heard time and time again that I will one day miss being this busy. As for this day….I look forward to that time. (lol) For day’s that I am away from the house all day I like to turn to a simple, fast and easy recipe to prepare for dinner. My super easy Chicken ala King is filling and a family favorite. It takes just a few ingredients that most have in the pantry.
Super Easy Chicken ala King
4 Cups Cooked Chicken Cubed
1 Cup Frozen Pea’s
1 1/2 tsp. Chicken Bullion granules
6 Cups Milk
2/3 Cup Flour
1/2 Cup Butter
1 tsp. Pepper
1/8 tsp. Celery Salt
*Biscuit’s~You can make your own of use those in the can.
In a large Sauce pan melt butter with bouillon, pepper, celery seed and flour. Mix well to make a roux, cooking until brown in color and thick. Slowly whisk in the milk, and stir until thickens. Add in pea’s and chicken. Lower heat to low and let the peas become fork tender. Serve over warm from the oven biscuits.
