While in the South I HAD to make sure that I had Fried Green Tomatoes prepared by a true Southerner! My friend Jyl was more than happy to teach me how to make them “the right way”. Now the seasoning brand she recommends is called Autry House Hush Puppie Mix with Onion. (I cant buy this in Nevada, so of course I bought some to take home with me. However you can order it on line. Also if you don’t want to do that you can use a flour/ cornmeal blend. I will list the amounts below) The great thing about making these are that you don’t have to worry about exact amounts. Some tomatoes are larger than others and will take more mixture, some less. So if you feel like you need more, just add in a small amount of each ingredient to supplement the remaining mixture. It is a very forgiving recipe, you can’t get it wrong.
Southern Fried Green Tomatoes
2 Cups All Purpose Flour
1 Cup House Autry Hush Puppie Mix OR Corn Meal
1 tsp. Salt
1 tsp. Pepper
3 Eggs~ beaten
Oil
Green Tomatoes
**if you like more of a “crunch”, use more cornmeal than flour.
Heat oil in a large skillet, over med. heat.
Slice your tomatoes semi thick….not to thick or they wont cook through to be tender.
Mix all the dry ingredients together, place in a shallow dish. Place the beaten eggs into a shallow pan. Dip each slice of tomato into the egg and then into the dry mix. You might need to press the mixture into the tomato. Place into heated oil. You will let the tomatoes fry for about 1-2 minutes on each side. Be sure to keep an eye on the tempature of the oil. The longer you cook, the oil will continue to get hotter and hotter. You will want to turn the heat down to a med.-low ~If the oil is too hot the tomatoes will not cook, and the batter will burn.
They are so addicting….I am pretty sure that I ate 3 whole tomatoes worth! 🙂
