I don’t know what it is about the month of May, for myself it is crazy busy! It’s almost as if the everything is scheduled to coincide with the end of the school year. I truly start each day by looking at my calendar to see what I am suppose to be doing. Where I need to be, what I need to provide, where I am working….the list goes on. I know I am not the only one that this happens to because several of my friends agree that the month of May is jam packed with things to do. Well today I thought would share with Y’all a Slow Cooker meal that will help take the stress out of making dinner on these busy nights. This is as simple as it can get. Just toss all the ingredients into your slow cooker in the morning, and let the magic begin!
Slow Cooker Chicken Taco Meat
3-4 lbs Boneless Skinless Chicken~ cut into strips
2 Envelopes Dry Ranch Dressing Mix
2 Envelopes Chicken Taco Seasoning Mix
2 (14.5 oz) Chicken Broth
1 (10oz.) Rotel Diced Tomatoes and Chilies
1 (4oz.) Diced Green Chilies
Place all the ingredients into your slow cooker, give it a good stir to combine. Place your heat setting to low for 6 hours. Drain off juice before serving along with all your favorite taco toppings. **I like to reserve the juice and add in 2 TBSP of Corn Starch with 2 TBSP of water. Stir together until thickens. This make a delicious Enchilada sauce! Easy and not stress involved 😉 We just need to keep our energy high, attitude positive and love in our heart. ~Lark
