If your family is anything like mine, the day after Easter you will have an over abundance of very colorful hard boiled eggs in the fridge. After making a ton of deviled eggs or a huge bowl of potato salad you still find that you have a dozen or so hiding in the fridge….. Well today is the day for making some Egg~cellent Egg Salad Sandwiches! This recipe is very forgiving in the fact that you can add just about any ingredient you want to add a little zip to it. (for example: Curry powder, Dijon mustard, fresh sliced avocado) I happen to love the added flavor and texture of fresh chopped chives. This is also great spread on to some crisp celery for a fast snack!
Egg~cellent Egg Salad Sandwiches
8 Hard boiled Eggs~ peeled & grated
1/2 Cup Mayonnaise
1 TBSP Mustard
1/4 Cup White Onion ~ finely diced
3 TBSP Fresh Chives
1/4 teaspoon Salt
1/2 teaspoon Pepper
In a large boil grate the hard boil eggs. Then add in remaining ingredients, stirring gently as to not make “mush” out of the eggs. Cover and let chill for at least 30 minutes before serving on your favorite bread. Sprinkle a little paprika over top just before serving. ENJOY~ Lark
