If you have never tasted Tomatillo Salsa, you have been missing out. Lately I cant seem to get enough of it. It has a mild taste with a hint of heat. (depending on how hot you make it) You can use it on anything you like, just as you would regular “red” salsa. ~ Omelets, Potatoes, Salad’s, Chips….. However MY favorite way to inhale it is served on fajita’s! The best part, is that it calls for only a few ingredients. So you are literally only minutes away from enjoying this supreme salsa tonight! Give it a try…you will be glad you did! 🙂
Easy Tomatillo Salsa
8-12 Tomatillo’s~ husked removed
2 Large White Onions~ large diced
6-8 Jalapeno Peppers~ seeded
2 (4oz.) Diced Green Chilies
1 TBSP Ground Cumin
1 TBSP Garlic Salt
Water
Lime/Lemon juice
Place all first 6 ingredients into a large stock pot.
Fill with water. Bring to a boil for 5 minutes, or until ingredients are fork tender.
Drain off half of the liquid. Then place into your blender or food processor. Puree until smooth. *Give it a taste to see if you might want to add in lemon or lime juice.
Let salsa cool, then cover and chill before serving. This will hold for 2 weeks.
