Many of you know I volunteer to teach at my local Middle/High School teaching the Cooking Program. Every year I try to come up with different recipes that I think the kids will enjoy making. Perhaps a recipe that I know many of them have never tried or heard of before. This is how I created this recipe. Knowing that some parents might not want their child to have a dessert containing a ton of caffeine (regular Tiramisu calls for Strong Coffee) I opted for hot chocolate instead. It Turned out wonderful!
Hot Chocolate Tiramisu
2 Cups Hot Chocolate
1 tsp. Vanilla
3 Egg Yolks
1 3/4 Cup Heavy Whipping Cream~ divided
1/2 Sugar
2 Cups Mascarpone Cheese
36 – 42 Ladyfinger Cookies
2 TBSP Cocoa Powder
Heat up hot chocolate, remove from heat and stir in vanilla. Set aside to cool.
Using a double broiler, combine egg yolks and 1/2 Cup whipping cream. Whisking continuously until mixture thickens. (about 5 minutes) Remove from heat and continue to whisk for another 5 minutes to help mixture cool. When the mixture is cooled, using your mixer with a whip attachment add in the remaining whipping cream, sugar and yolk mixture. Beat together for 5 minutes or until soft peaks form. Slowly add in mascarpone cheese, blend. Now this next step will sound as if you are doing an unnecessary step…..however believe me when I tell you it needs to be done. 🙂 In a 9×13″ pan make a single layer of ladyfingers laying side by side. That way you will know just how many of them you will need for each layer. Now taking each ladyfinger, dip them into the cooled hot chocolate and then lay back down in pan. (if you try to skip this step and just pour the hot chocolate over the cookies, you will end up with a soggy mess!) Now you will spread half of the whipped mixture over the ladyfingers. Sprinkle 1 TBSP of the dry coca powder over top the mixture. You will repeat this again using the remaining ingredients for a second layer. Wrap tightly with plastic wrap and let chill at least 6 hours. I like to make his the day before, letting it chill overnight. Slice and Serve.
