Homemade Strawberry Pomegranate Syrup
8 Cups Fresh Strawberries
3 Cups Pomegranate Juice
1 1/2 Cups Sugar
Start by hulling the strawberries and cutting them into quarters. Place into a large Dutch oven. Pour sugar over berries and let set for 15 minutes. Add in pomegranate juice.
Place on a medium/ high heat stirring until sugar is dissolved. Turn heat to medium, stirring occasionally. You will let this mixture cook down for 3-4 hours. Make sure the mixture does NOT boil. The mixture will become a thicker consistency. Remove from heat and let mixture cool completely.
Once cooled you will place entire mixture into a food processor or blender to puree until smooth. *(if you don’t want the strawberry seeds, you can place the mixture into a sieve and crush berries that way.) Store syrup in refrigerator for up to 1 month. You can also can this to make it shelf safe. We love this syrup on waffles, biscuit’s, even over ice cream.
