Today Y’all are in for a treat! Because Not only are you getting a New Recipe to try, you are getting to meet a good friend of mine~ who just happens to be the creator of this great dish. Fettuccine Alfredo With Spinach Meatballs
10 oz. pkg. frozen chopped Spinach
1 lb. Ground Beef
1 Egg
1 Cup Bread crumbs
1/4 Cup Water
1 tsp. Salt
1/4 tsp. Pepper
2 TBSP Vegetable Oil
12 oz. Fettuccine Noodles
1 1 /2 Cups Heavy Cream or Half and Half
3/4 Cup grated Parmesan Cheese
1/2 Cup Butter (1 stick)
Thaw the spinach and squeeze it dry. Mix the meat, egg, bread crumbs, water, spinach, salt and pepper together and shape into 1 inch meatballs. Brown the meatballs in 2 tablespoons of oil over medium heat. Prepare the noodles as directed on the package. Once the noodles are done drain them and place them back into the pot. Over low heat toss the noodles with the cream, butter and cheese until heated through. Add the meatballs and toss gently.
