If you are anything like my family, the holiday’s bring a lot of food! And that means leftovers….after all that is one major advantage to hosting the BIG meal’s at your own home right? Well after a day of left over turkey or ham sandwiches, you might start hearing the “turkey/ham again” comments coming from your family members. I created this recipe to give all those leftovers a “new life”. Plus the great thing about this recipe is that you can freeze them for up to 1 month! (Just in time for New Years Day of finger food galore!) You can use this recipe interchangeable with Turkey, Ham, Chicken, Roast or Duck.
Holiday Bites
*You can adjust the measurements to fit the amount of leftovers you might have*
2 Cups Turkey~ diced
2 Cups Stuffing
2 Cups Mashed Potatoes
Place all the precooked leftovers into a large bowl.
Mix together until all the ingredients will stick together. You will then scoop into 1-2″inch balls. Place onto a baking sheet pan that has been lined with wax paper. Continue until all the mixture is formed into balls.
Place into the freezer and let freeze over night. At this point you can decide if you want to cook them or freeze for later. If freezing, place into a gallon sized freezer bag. These will last for up to a month in your freezer. If you are deciding to prepare them, you will need to pre heat your oven to 400 degree’s. Remove the wax paper from the baking sheet. Bake them for 20 minutes, turn over and return to oven for another 10 minutes. I like to serve them warm topped with any left over cranberry sauce or gravy.
