This the Season of Sweet Treats. Divinity is one of those candies you don’t see many making anymore. It’s not that it is difficult to make, maybe just a little technical. For instance, if it is a cloudy day or humid in any way…..you do NOT want to try making it! It will effect the candy. It isn’t an “old wives tale”, believe me I have tried it!
I just taught High School students how to make this recipe, so if you have tried another recipe in the past and found it to difficult, give this one a try. If H.S. students can make it, you can!
Lark’s Easy Divinity
2 1/2 Cups Sugar
1/2 Cup Light Corn Syrup
1/2 Cup Water
2 Egg Whites
In a saucepan bring the sugar, corn syrup and water to a boil. Stirring until all the sugar has dissolved. Then stop stirring and let mixture come to a hardball stage on your candy thermometer. When your sugar mixture reaches within a few degrees of the hardball stage, start beating your egg whites on a high speed for 5 minutes. When sugar mixture has reached the hardball stage remove from heat and slowly pour a thin stream of the syrup mixture into the egg whites as the mixture is on a med.-high speed. (Make sure to pour slowly) continue until all the syrup mixture has been added. The mixture with become thick and glossy. **Now this is where speed is the key, you will need to work fast to drop the divinity by the spoonful onto a piece of wax paper. The divinity will dry quickly and become crumbly if you don’t move quickly.**
That is all there is to making Divinity. Very simple. You store this in an air tight container.
~NOTE: The recipe makes about 12-15 pieces. However you do NOT want to double the recipe. Just make another batch. The hard part is making sure to save some for everyone else.
