you are in for a treat with this
Skillet Pumpkin Corn Bread!
Skillet Pumpkin Corn Bread
1/4 C. Butter~ softened
1 C. Yellow Cornmeal
2/3 C. All Purpose Flour
1 TBSP. Baking Powder
1/2 tsp. Baking Soda
3/4 tsp. Salt
1/8 tsp. Pumpkin Pie Spice
1/4 C. Honey
1 C. Pumpkin Puree
2 Eggs
3/4 C. Buttermilk
Preheat oven to 400
Butter the bottom/sides of your
cast iron skillet~ set aside.
In a mixing bowl combine all ingredients
together and whisk until blended well.
Pour into your buttered skillet
place on center rack on oven and
bake for 25-30 minutes.
You can either serve this along side
a bowl of chili or topped off with
some sweet honey butter.
