As many of you know, September
and October start my CANNING SEASON!
I order plums, peaches, pears and
apples all by the case. Usually I save
a few of each fruit to make into
“other” items instead of canning them
all into jam or flavored butters.
This recipe is one I created for the
purpose of peaches. However after
having my taste testers try it and get
their feed back, I am thinking I will
make it again using pears and apples.
They all LOVED it!!
It tastes just like a peach cobbler.
Super moist, with chunky pieces of
ripe peaches inside every bite…YUM!
Peach Cobbler Bread
3 1/2 C. All Purpose Flour ~ I use Gold Medal Flour
1 C. Sugar~ I Use Domino Sugar
4 tsp. Baking Powder
1/2 tsp. Salt
1/2 tsp. nutmeg
1 tsp. Cinnamon
1 Stick Butter~ softened
2 Egg’s
1 tsp. Vanilla
1 tsp. Almond Extract
1 C. Buttermilk
2 C. Peaches~ diced
Preheat oven to 400
Sift together the first 6 ingredients.
In a separate bowl beat together the
butter, eggs, vanilla, almond and
buttermilk. Add this to the dry ingredients
blend well. Fold in peach’s.
Divide batter into (6) mini loaf pans
or (2) 8×4 loaf pans that have been lightly
greased. I also sprinkled a little bit of
cinnamon/ sugar over the top of each loaf.
You can add that or leave it out.
Bake for 20-30 minutes
I tested mine at 20 minutes and then
had to add another 5 minute cooking time.
Just make sure to test the center of each loaf
with a toothpick until it comes clear.
