This salad creation is the combination
of a Pasta and Macaroni Salad.
I love the Italian dressing flavor
of your standard pasta salad.
Yet the mayo/mustard base of
a macaroni salad is just as good.
I guess I had one of those
“light bulb” moments…and put
them together!
(queue the streamers, horns and drums)
Creamy Italian Macaroni Salad
1 lb. Pasta Noodles~ any style
1 C. Mayonnaise
1/2 C. Zesty Italian Salad Dressing
1 tsp. Pepper
1/2 tsp. Salt
1 C. Sharp Cheddar Cheese~ shredded
2 Roma Tomato’s ~chopped
2 Hard Boiled Eggs~ chopped
1 (4oz.) Sliced Olives
1/4 C. Green Onion~sliced
1/2 C. Celery~chopped
Prepare pasta noodles according
to package directions. Drain and
place into a large bowl with remaining
chopped ingredients.
In small bowl combine the mayo,
italian dressing, salt and pepper together.
Pour over noodles and veggies.
Stir until well coated.
*If salad is to “dry” for you can double the
dressing to make a more “wet” salad.
Chill for at least 1 hr. before serving.
