I cant tell you how many different
cook books I own in my collection.
Every time I travel, vacation or
for special occasions I want to
buy another to add to my addiction.

has Co-Authored several cook books
in the COUNTRY COMFORT SERIES.
So of course I wanted to share
a recipe with Y’all from one of these
country cook books.
I chose the Cooking Across America Cook Book.
After thumbing through this book,
I found just what I was looking
forward to making, An old Fashioned Pie!
Shaker Lemon Pie
2 Large Lemons
2 C. Sugar
1/4 tsp. Salt
4 Eggs
4 TBSP. Unsalted Butter~ melted
3 TBSP. All Purpose Flour
1 (9-inch) Unbaked Pie Crust
Start by washing/drying the lemons.
Cut off ends, slice very thin.
Removing all seeds.
Toss sugar, salt and lemon
slices together. Cover and set
aside at room temperature for 24 hrs.
The next day, preheat oven to 425.
In mixing bowl beat eggs until
frothy. Add in flour and melted butter,
whisk until smooth. Combine
the lemon/sugar mixture.
Pour into the unbaked pie crust.
Bake on cookie sheet to catch
any overflow during baking.
Bake for 30 minutes at 425,
then reduce heat to 350 for another
25-30 minutes.
*You may want to cover edges of crust
with strips of foil to prevent over browning.
Let Pie Cool completely before serving.
This is a VERY Tart Lemon Pie,
a small slice goes a long way.
It was Delicious.
