My love of baking is what pushes me
to make up my own recipes.
Not always are they
tasty treats, mind you.
(I just don’t talk about those..ha, ha.)
However every once in a while
I “hit the nail on the head”
THIS is one of those times!!
I have also made these bars using
Blueberries and Raspberries.
My favorite though is Cranberries.
Cranberry Cheese Cake Bars
CRUST:
3 C. Flour
1 C. Brown Sugar
1 1/2 tsp. Cinnamon
1 C. Butter~cold
CREAM CHEESE MIXTURE:
12oz. Cream Cheese
1/2 C. Sugar
2 Egglands Best Eggs
2 tsp. Lemon Juice
FRUIT FILLING:
1 (14oz.) Jelled Cranberry sauce
2 tsp. Almond Extract
3 tsp. Cornstarch
1 C. Fresh Cranberries
Preheat oven to 350
Blend together all the crust ingredients
with a pastry blender. Press half
mixture into a lightly greases
9×13 pan. Bake for 15 minutes.
While crust is baking beat together
the Cream Cheese mixture
until smooth. Using a plastic
bag toss the fresh berries
with the cornstarch until coated.
In a separate bowl whisk together
cranberry sauce and almond extract.
After crust is cooked spread
cream cheese mixture over top evenly.
Sprinkle the remaining crust over
top to finish off.
Sprinkle the remaining crust over

Drop the whipped cranberry
sauce by the spoonful over
the cream cheese filling.
Finish off by sprinkling the
coated berries over top.
Bake for 40-45 minutes
until center is “set”.
Cool completely on wire rack.
Cut into desired size and chill.

These sound great but am unsure what to do with the other half of the crust mixture. Is that what looks to be crumbled over the top? Can’t wait to try this.

I think you sprinkle it on top after you put the cornstarch covered cranberries on since it says “Sprinkle the remaining crust over the top to finish it off”.
