I am off running in the Disneyland 1/2 Marathon today!
So I thought I would Highlight a “tried and true”
family recipe that I had posted a while ago.

This is a great “Lazy Day” casserole.
Now that doesn’t mean it’s not good, because it is VERY good.
It just mean’s it doesn’t take a lot of time to prepare. 🙂
Sausage Rice Casserole
1 TBSP Butter
1/4 C. Celery ~ diced
1/2 C. White Onion~ finely diced
1 lb. Pork Sausage (can use as spicy as you want)
1 envelope pkg. Lipton Chicken Noodle Soup Mix
1 C. Rice~ uncooked

Preheat oven to 350
Saute celery and onion in the butter until tender.
Add in sausage, cook until it is no longer pink.
Mean while make the soup according to package directions.
In a casserole dish that has been lightly greased,

spread the uncooked rice on bottom.
Then sprinkle sausage mixture over rice.

Pour soup over entire dish.
Bake in for 45 minutes or until rice is cooked.

You know I remember some old recipes using packaged soups like this. Are you an old soul?? 😉 Seriously though, this is almost like a dirty rice… without the dirty! Hope you had a nice Labor Day.
