Have you planned out your 4th of July Menu yet? With it only being a few days away, there is still time. Most every B.B.Q. has a Macaroni Salad present. So I thought why not make it as healthy as possible? That’s when I found a great recipe over at Isabelle at Home. If you haven’t visited her blog yet, do yourself a favor and go check it out. She is all about making healthy choices.

Lighter Macaroni Salad
*recipe adapted from Isabelle at Home*
8 0z. Cooked Macaroni Noodles (I used Whole Wheat)
2 Hard Boiled eggs
3/4 C. Fat Free Sour Cream
4 TBSP Fat Free Ranch Dressing
1 TBSP Frank’s Hot Sauce
1 Fat Free String Cheese; cut into small pieces
2 Dill Pickles; finely diced
1 Green Onion; finely diced
1 Carrot; shredded & diced
Salt & Pepper to taste
Mix together Sour Cream, ranch, hot sauce, salt & pepper. Add in the eggs, cheese, pickles, carrot, and green onion. Stir in Cooked noodles.
Stir until all noodles are coated. Chill for an hour before serving.
Picnic Perfect!

I found this on Amee’s Fit Fridays. I love the use of FF Sour Cream (yum!) instead of mayo. It could be made even healthier with the use of a multigrain pasta – I love Barilla Plus.
