It’s such a pleasure and an honor to write on Lark’s blog for a guest post! I’m the author of the blog, The Girly Girl Cooks and have enjoyed teaching myself to cook while going to school to become a nurse here in Montana. Before I discovered cooking and blogging, my boyfriend and I would have frozen dinners, pizza or go out to eat. Now I spend my evenings in the kitchen making fun and exciting dishes. I’ve broken out of my shell of making the same dish over and over again, and now I rarely make the same thing twice! I’m not afraid to try new ingredients and different types of cuisine. Now I just want to try them all!

With summertime barbecuing coming into full swing, burgers and hot dogs are the hot food item of the season. One of my new favorite types of recipes to try is burgers/sandwiches that step away from the classical “beef hamburger.”
A couple weeks ago I made Tzatziki Sauce and Chicken Souvlaki on my blog and today while trying to figure out what to make for lunch, a light bulb sparked for me to make a Greek Chicken Sandwich using these two recipes!
Here is what you are going to need for this fantastic sandwich…
{2 servings}
-2 Chicken Breasts (4 oz each)
-1 tbsp Olive Oil
-1 tsp Cavender’s All-Purpose Greek Seasoning
–Condiments such as: Lettuce, Feta Cheese, Grilled Onions and Sliced Tomatoes
-Tzatziki Sauce
-2 Hamburger Buns
-1 tbsp softened Butter
About an hour before you are ready for lunch or dinner, toss the 2 chicken breasts, olive oil and Cavender’s seasoning in a Ziploc plastic bag to marinate. If you have never heard of Cavender’s seasoning, you gotta try it! It has changed the way I cook/eat chicken!
While the chicken marinates, start heating up your grill and prepare the Tzatziki Sauce.
Here is what you are going to need for Tzatziki Sauce…
-1-1/4 cup Chobani Plain Greek Yogurt
-1 whole large Cucumber (seeds removed, grated and squeezed dry in a dish towel)
-2 cloves of minced Garlic
-2 tbsp Lemon Juice
-1/2 tsp dried Dill Weed
-1/8 tsp Salt
-1/8 tsp Pepper
-1/8 tsp Sugar
-1 whole large Cucumber (seeds removed, grated and squeezed dry in a dish towel)
-2 cloves of minced Garlic
-2 tbsp Lemon Juice
-1/2 tsp dried Dill Weed
-1/8 tsp Salt
-1/8 tsp Pepper
-1/8 tsp Sugar
Just throw all the ingredients together in a bowl and mix to combine!
Ta-da! Easy peasy!
Once you are ready to eat, grill up the marinated chicken on your BBQ and toast your Hamburger buns by spreading ½ tbsp of butter on each set of buns and toasting them under the broiler until golden brown, about 1 to 2 minutes.
Now that all the components are cooked and ready, it’s time to assemble the Greek Sandwich!
Put the Tzatziki Sauce on both toasted hamburger buns; add the grilled chicken breast, then the lettuce, onions, sliced tomato and feta cheese.
Totally delicious! Enjoy this fun and tasty sandwich!
