You are going to love how easy and simple these Lemon Crackle Cookies are to make.They are bursting with lemon flavor. There is no need for frosting these little gems, however if you still wanted to add a little bit of a “zing”, I would recommend drizzling them with a thin lemon icing.
Lemon Crackle Cookies
3 boxes of Lemon Cake Mix~ I like to use Betty Crocker
6 Egg’s~ beaten
1 Cup Canola Oil
2 TBSP Lemon Juice
1 tsp. Fresh Lemon Zest
Powdered Sugar
Preheat oven to 375
In a mixing bowl combine all the ingredients together except the powdered sugar. Mix on medium high speed until blended. Scoop a 2 inch ball of dough out and roll into the powdered sugar. Place on a lightly greased and parchment paper lined baking sheet. Bake for 10-11 minutes. Allow cookies to cool for a few minutes before removing to a cooling rack.
*If you are wanting to add the lemon icing wait until the cookies are completely cooled before adding.
Lemon Icing
2 Cups Powdered Sugar
6 TBSP Lemon Juice
Whisk together to make a smooth icing.
